Érase una vez, una vegana y una celíaca se hicieron amigas
Me presento, me llamo Marina y soy vegana. Llevo siéndolo medio año, aunque antes fui vegetariana durante 7 años. Conozco a Cris (celíaca y creadora de este blog) desde hace 8 años. Llegó un día en que Cris y yo nos hicimos amigas, lo cual nos llevó a darnos cuenta que salir a comer juntas se hacía… un poco complicado. Además, como a ninguna de las dos se nos daba bien cocinar, solo comíamos tortilla francesa y pizza de 4 quesos sin gluten si quedábamos en alguna casa. ¿Divertido, verdad? Ahora imaginad lo complicado que resulta toda esta situación cuando yo decido pasarme al veganismo. Lo primero que se nos pasó por la cabeza a las dos fue: no vamos a poder comer juntas nunca más. Está claro que siempre estamos a tiempo de comer una ensalada, pero llega un momento en que las ensaladas pierden todo su encanto.
Hay que pasar a la acción
Tuvimos que implicarnos más en nuestra alimentación para poder mejorar nuestras opciones. Empezamos a practicar más nuestra habilidad en la cocina, buscando nuevas recetas; hicimos búsqueda y captura de restaurantes con opciones para ambas y descubrimos que, en realidad, no era tan complicado como pensábamos. Por supuesto que cuando llega el momento de pedir comida a domicilio o de elegir un sitio dónde comer nos tenemos que parar a pensar cómo lo hacemos, pero al final siempre encontramos algo.
Ahora que os habéis hecho una idea de las complicaciones que tiene una amistad entre una celíaca y una vegana, quiero que os planteéis una cosa: ¿y si Cris se hiciese vegana también? ¿Sería posible que comiese algo más que pasta sin gluten, una ensalada o un arroz con verduras? La respuesta es sí, sería posible. ¿Complicado? Por supuesto, pero posible.
Y todo esto, ¿a qué viene?
Como todas las demás personas veganas del mundo, quiero que más gente se una a este estilo de vida. Quiero que Cris se haga vegana si algún día decide hacerlo y que no se le haga un mundo empezar. Porque amigas y amigos míos, me he dado cuenta que la información que existe actualmente sobre una alimentación vegana y sin gluten es…casi inexistente. Así que voy a hacer todo lo posible para que eso cambie, juntando mis conocimientos sobre veganismo y toda la información que obtenga sobre las necesidades alimentarias de las personas celíacas. Para así conseguir una «guía» de cosas a tener en cuenta en tema nutrición y muchas recetas para que no tengáis que recurrir siempre a una ensalada. Por mí, por Cris y por todas las personas celíacas que quieran pasarse al veganismo. Porque sí, ¡veganismo y celiaquía pueden coexistir!
